This was our dinner last night. I found some chorizo at our local meat market, which is one of my favorite places because the meat they sell comes from locally raised, pastured animals. Chorizo is basically ground pork with some spices, including chili powder that gives it the red color. I decided to make stuffed zucchini with the chorizo. 1 ounce shredded raw cheddar cheese.
